Layers of buttery Biscoff cookies, fluffy vanilla bean Chantilly cream, and a jammy mixed berry sauce come together to create a dessert that feels equal parts elegant and effortless. It is sweet without being too sweet, rich without feeling heavy, and packed with enough fresh berries to make it feel like summer on a plate.
The hardest part is waiting overnight for everything to chill. Trust me, it is worth it.
Ingredients:
Crust:
- 16 ounces Biscoff cookies (save a handful of whole cookies for the layers)
- 8 tablespoons unsalted butter, melted
Berry Sauce:
- 24 ounces fresh mixed berries
- 50 grams granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1½ teaspoons cornstarch
Chantilly Cream:
- 12 ounces cold heavy cream
- 14 ounces sweetened condensed milk
- 16 ounces cold mascarpone cheese
- 1 tablespoon vanilla bean paste
- Pinch of kosher salt
For Topping:
- Fresh blueberries
- Fresh strawberries
- Fresh blackberries
- Powdered sugar
Instructions:
Make the Crust:
- Using a food processor or a rolling pin and a large ziploc bag, crush the Biscoff cookies into fine crumbs. (Set a handful of whole cookies aside for the layers later.)
- Transfer the crumbs to a bowl, add the melted butter, and stir until the mixture resembles wet sand. Press the crumbs firmly into a lined 9-inch pan, making sure to cover the bottom evenly to your preferred thickness. Place the crust in the refrigerator while you prepare the remaining layers.
Make the Berry Sauce:
- Add the fresh berries, sugar, and lemon juice to a saucepan over medium heat. Stir occasionally and allow the berries to release their juices, about 8 to 10 minutes.
- Using the back of a spoon, gently mash some of the berries until the mixture becomes jammy while still leaving plenty of texture.
- In a small bowl, whisk together the water and cornstarch until smooth. Pour the mixture into the berries and continue cooking for another 5 to 8 minutes, stirring occasionally, until slightly thickened.
- Remove from the heat and allow the sauce to cool completely.
Make the Chantilly Cream:
- In the bowl of a stand mixer, combine the heavy cream, sweetened condensed milk, mascarpone, vanilla bean paste, and a pinch of salt.
- Mix on medium speed for 2 to 3 minutes, or until stiff peaks form. Keep an eye on it toward the end because mascarpone can go from perfectly fluffy to over mixed rather quickly.
Assemble:
- Remove the crust from the refrigerator and begin layering.
- Spread about one-quarter of the Chantilly cream evenly over the crust, followed by one-quarter of the berry sauce. Add a layer of the reserved whole Biscoff cookies.
- Repeat the layers until everything has been used, finishing with a final layer of Chantilly cream on top.
- Cover and refrigerate overnight, allowing the cookies to soften and all the layers to settle together into something truly dreamy.
Finish and Serve:
- Just before serving, top with fresh blueberries, strawberries, and blackberries. Finish with a light dusting of powdered sugar and serve chilled.
A Few Sweet Notes:
- The berry sauce can be made a day ahead and stored in the refrigerator until you’re ready to assemble.
- Feel free to use whatever berries look best at the market. This recipe is just as lovely with a single berry as it is with a mix.
- Overnight chilling is worth the wait. It gives the cookies time to soften into cake-like layers and lets all the flavors mingle together.
- For the prettiest presentation, add the fresh berries and powdered sugar just before serving.
