The Cinnamon Rolls That Make My Apartment Smell Like Fall

There’s nothing quite like the smell of cinnamon rolls baking it’s the scent that makes any place feel instantly like home. Warm, soft and perfectly sweet they’re my favorite fall pastry especially when they’re made from scratch. And paired with an iced coffee (because yes I’m still in my iced coffee in October era) it’s pure cozy perfection.

Dough:

Ingredients:

  • 4 1/2 all purpose flour
  • 1 teaspoon salt
  • 1 cup warm milk
  • 1/2 cup granulated sugar
  • 2 1/2 teaspoons instant dry yeast
  • 2 large eggs
  • 1/3 cup unsalted butter
  • 1/2 cup heavy cream (for risen rolls)

Directions:

  • Heat up a cup of milk, sprinkle yeast and allow to sit for 3 minutes. Yeast will get a little frothy to show it is activated.
  • In mixing bowl add milk mixture, room temperature eggs, butter, sugar and mix until combined.
  • Mix in salt and 4 cups flour.
  • With the beater blade mix ingredients until barely combined and allow mixture to rest for 5 minutes.
  • Scrape dough off the beater blade and remove it then attach the dough hook.
Knead dough on medium speed for 5-7 minutes (add in up to ½ cup more flour only if needed to form a dough). Dough should be elastic and smooth.
  • Place dough in a large greased bowl and cover with a towel.
  • Set bowl in a warm place and allow the dough to rise until it has doubled (30-60 mins).
  • Sprinkle work surface with flour and with a rolling pin roll dough to about a 24×15 rectangle (does not have to be exact).
  • With a rubber spatula smooth butter (soften) on dough and sprinkle cinnamon sugar mixture out evenly.
  • Starting on the long side roll the dough up tightly.
  • Cut into 12 slices and place in a greased 9×13 baking pan.
  • Cover the pan with a towel and allow the rolls to rise for 20 minutes.
  • Preheat the oven to 375.
  • Microwave heavy cream (5-10 seconds). It should be warm to the touch.
  • Once the rolls have risen pour the heavy cream over the top of the rolls and allowing it to soak into the rolls.
  • Bake in a preheated oven for 25 minutes, until the rolls are lightly golden brown and the center rolls are cooked through. (This may vary based on how big the rolls are, what type of pan, how close the rolls are, etc.)

Filling:

Ingredients:

  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 4 tablespoons cinnamon powder

Directions:

  • In a medium size bowl combine brown sugar and cinnamon. Set aside.
  • Leave butter out to soften.

Icing:

Ingredients:

  • 6 ounces cream cheese
  • 1/3 cup butter
  • 2 cups powder sugar
  • 1/2 tablespoon vanilla extract

Directions:

  • In a large bowl combine the softened cream cheese and butter and mix.
  • Add vanilla extract and powdered sugar. Beat until combined.
